If you’re after a simple, stress free, and really tasty lunch idea for your kiddo, we’ve got you! Whether you're heading out for a summer adventure or packing lunch for a busy day on the go, this banana French toast recipe from mjandhungryman.com is super quick to make, kid approved, and lunchbox friendly (especially with our snack tubs for those sticky toppings!).
ingredients:
-
3 slices of bread (white, whole wheat—whatever your kiddo likes)
-
1 tbsp milk (any kind works!)
-
1 banana
-
2 eggs
- 1/4 butter
-
1 tsp vanilla
-
1 tsp cinnamon
optional toppings:
-
Fresh berries
-
Yogurt
-
Peanut butter
-
Maple syrup or honey
-
A dusting of powdered sugar
instructions:
-
In a large bowl, mash the banana until smooth
-
Add the eggs, milk, vanilla, and cinnamon. Mix it all together
-
Dip each slice of bread into the banana egg mixture
-
Place the dipped bread slices on a lined baking tray
-
Bake in a preheated oven at 350°F (180°C) for 10 to 15 minutes, flipping halfway through, until golden brown and cooked through
-
Let them cool slightly. You can slice them into fingers or fun shapes for toddlers or picky eaters using cookie cutters—just a handy tip!
how to pack it:
Pair those golden slices with fresh fruit like mandarins, berries, and raspberries, plus some crunchy crackers on the side. Our snack tubs are perfect for sticky add-ons like maple syrup or honey, easy to dip and totally mess free. Then pop everything inside one of our lunchboxes (yes, even the snack tubs!).
